Tasty Tuesday: Autumn arugula salad

The pomegranate seeds really make this.

OK, I must confess that I did not follow this recipe completely. I don’t like avocados much, and I didn’t have any squash on hand. But I made the rest of this autumn arugula salad from How Sweet Treats and omg, is it amazing! If nothing else, you’ve got to try the dressing. Plus, pomegranates are so cheap right now; Wood Sprite picked out a bunch for fifty cents at Aldi the other day.

I have to be honest; Wood Sprite and I often have all-fingerfood lunches, or a combination of soup/sandwich/or pasta with some raw vegetables and fruits. We just like to eat that way—and sometimes we are so busy that I don’t have time to make much. So if you are like us, you might use them for the older kids and adults in the house, too!
