All About: Scallops

I would say that out of all categories of food, seafood is where I am least confident in the kitchen. I enjoy seafood, but I have ruined too many things by overcooking them. Given the cost of fish, shrimp, scallops, and other kinds of seafood, this is one thing I'm happy to leave to the experts.

Out of all the various seafoods, though, scallops are what I have cooked most often, and what are most likely to turn out well. Maybe scallops are more forgiving than other kinds of seafood, or maybe I just have a knack for it. Regardless, a sale on scallops always lures me in.

Weekly Recipes: Ruby Citrus Mojito

Indy and I are celebrating our 7th wedding anniversary (even though we’ve technically been together since junior high, nearly19 years ago) this weekend and, as usual, we have no idea what we want to do once Wood Sprite is at my parents’ house. I am thinking this ruby citrus mojito might be fun to make. We used to experiment with new drinks during date nights and it was a lot of fun.

Weekly recipes: Pot pies

My aunt absolutely loves pot pies. When we lived together, she used to always add them to the shopping list. I haven’t had one in a long time, but the thought of a homemade pot pie makes my mouth absolutely water! Here’s a recipe for homemade frozen pot pies from Fabulously Frugal that you can assemble, freeze and cook whenever you need a quick meal. I love it because it uses leftovers and provides you with a fast meal without fast food. Plus, it just sounds delicious.

Tasty Tuesday: Yorkshire pudding

Have you ever made Yorkshire pudding? It’s not the kind of pudding we think about in America, but salty, savory buns to go with a roast or dinner. It’s actually quite delicious! We made some for our Country Club last year when Wood Sprite did a presentation on England and they were really good. Here’s a recipe if you’d like to try them out; they’re really perfect for cold days like these.

Snowed in?

A lot of us are going to find ourselves snowed in over the weekend, so it’s a good time to start planning some activities to do to keep your kids (and yourselves) entertained. Here are some fun ideas; feel free to share your own in the comments.

Tell stories, sing, cook, or do any of these other simple yet fun ideas. Make your own family recipe book or write a family anthem together to perform on special days.
