There are three different camping sites you can use at Buffalo Rock State Park & Effigy Tumuli, but none of them have energy hookups so you’ll have to bring your own heat. Pack up your picnic gear and tent and head over to the park for a rustic weekend of fishing, snuggling, hiking and more snuggling. There is also plenty to see at the park, most notably the American bison who roam the nature area. As you walk the trails, you’ll find lots of plants and animals close-up, creating perfect photo opportunities for your weekend away.

How to bake chicken thighs

Here's something you can chalk up to the fact that I only started learning how to cook about five years ago: I just recently figured out how to bake chicken thighs. I eat a lot of chicken thighs, because it's the cheapest cut of meat. But for the most part I use the meat in slow cooker recipes. It wasn't until I read the label on my bottle of Frank's Red Hot Buffalo Sauce that I realized just how easy it can be to bake chicken thighs.

Buffalo sauce goes with everything

I hate to sound like a victim of a marketing campaign, but it's true what they say about Frank's Red Hot Buffalo Wings Sauce: I really do "put that **** on everything."

Buffalo sauce is the newest addition to my low-carb eating toolkit. Unlike almost every other sauce on the market, it has neither gluten nor sugar. It packs in a lot of flavor for zero carbs. Frank's Buffalo Sauce is pretty much the "original" Buffalo sauce, for whatever that is worth. The original recipe for Buffalo wings used a bottle of Frank's Red Hot sauce.

In defense of chicken thighs

I recently wrote an ode to the humble pork loin, which is a surprisingly tender and flavorful cut of pork at a surprisingly low price. The chicken equivalent to the pork loin is chicken thighs. I am eternally baffled by the low price of chicken thighs compared to other cuts of chicken. They are the second-cheapest form of chicken at my local grocery store; only whole roasters are less expensive per pound. And thighs are so tender and tasty!

Some positive remains in Buffalo country

After the saga that has been the firing (or was it resigning?) of Athletic Director Mike Bohn, the Buffs really needed a win. While the track program still has a few opportunities to shine at NCAA nationals, the fact is the Buffs need a win. That win may come in the form of a good looking recruiting class courtesy of Tad Boyle and CU men’s basketball team.

I harbor a not-so-secret fondness for true crime novels. In fact, I went through a phase in the 90s where I read almost nothing but true crime, until I realized that most true crime novels are formulaic and boring (because most true crimes are formulaic and boring).

The Western wheels on the bus go round and round

Big fan of public transportation here, and I was just introduced to the budget bus company, Megabus. Ran into one almost literally at the LA Times Travel show and it was huge! The double decker bus features comfortable seating upstairs – the better to observe the world rolling by. Downstairs there are tables with electrical outlets and WiFi throughout (although some riders claim the service is spotty on certain routes).
