Low-carb cooking with chocolate

Chocolate has a lot of great health benefits, including flavonoids and many other micronutrients. But the fat and sugar content in chocolate makes it a "no go" for those of us on low-carb diets. However, the good news is that you don't have to give up chocolate entirely!

Unsweetened cocoa powder is a valuable addition to many recipes. It may seem strange to use cocoa powder in savory recipes, but remember, cocoa powder is the key ingredient in mole sauce. (And mole sauce is delicious!)

Here are a few ways you can have your cake and eat it too, so to speak.

More Cliches Than You Can Shake a Stick At

 

I am super-appeciative of GLS and Thirteen (Logan) taking the time to "interact with our community" (I said it would be about cliches), and build bridges that ought to be built.  So, this three-part (yowch!) essay is not "aimed" at the folks that GLS mentions in his comment "Analytical vs. Un-Analytical," but is merely "riffing" off the ideas he touches on.

Grappling with eggplant

I love the idea of eggplant. It looks so tasty, all plump and purple at the store. But I'll be honest with you, I have yet to successfully cook this strange vegetable. And yet every year I can't help but try, like Charlie Brown kicking that football.

Eggplants are part of the nightshade family, related to the tomato and the sweet pepper. They grow on vines like tomatoes, creating large pendulous fruit that are in season in late summer (August to October).

Monday Medley: Benefits of spirulina, psychotherapy news

My husband and I would like to get a little more iodine (and a little more blood pressure control) naturally in our lives, so we are considering taking spirulina. This superfood has a ton of benefits, is packed with protein and vitamins, and we’re heading to the health food store to find out more information this week. Anyone have experience with it? I want to know if it’s a sustainable food, too.

If one is good, 50 is better

Have you ever walked into a Bed, Bath, and Beyond and been completely blown away by how much…well, shit there is all over the store. I’ve never been so overwhelmed while shopping until I saw the hectic aisles, cramped spaces, and merchandise from floor to ceiling of the American chain. While this experience will always stand out to me, one place that nearly matches the spectacle of BB&B are the streets of Ubud.

China Looking to Take Over U.S. Pork Production Company

In a recent Chinese economic play, it looks like Shuanghui International Holdings Ltd is trying to secure one of the UnitedState’s biggest pork producing companies, Smithfield Foods.  Shuanghui also happens to be China’s largest meat processing company and, if they manage to get approval for their purchase, they will own yet another piece of foreign food production, a trend that is growing as of late.
